2 children’s dinners ready in 15 minutes
Chicken and artichoke escalopes
Ingredients
- Salt and fresh black pepper
- A cup of all-purpose flour
- 4 chicken chops or escalopes (about 100 g each)
- ¼ cup of olive oil
- A bunch of fresh parsley
- 220 g of angel hair
- 220 g of chopped artichokes
- 2 tablespoons of capers
- ½ cup of chicken broth
Preparation
- Take a grill out of the oven and preheat to 100 ° C.
- Take a medium sized pot and heat over medium heat. Add lukewarm water until it reaches the middle of the bowl and add a pinch of salt.
- Place the flour and a pinch of salt and pepper in a sealable bag. Then, season the chicken chops, put them in the bag and close it tightly. Shake it so that all the chicken portions are well covered in flour.
- Pour the olive oil into a pan and wait until it is hot. Remove excess flour from the chops and fry them in olive oil. You will understand that they are ready when they are golden on both sides (in total, it will take about 4 minutes).
- Then, place the chops in the oven so that they finish cooking.
- Meanwhile, toss the angel hair into the salty water, which should have reached boiling point by now. To obtain an al dente cooking, with the desired consistency, wait about 3 minutes.
- Fry the artichokes and capers in a pan. Add the chicken stock and wait for half of it to remain. Then, season with parsley, salt and pepper.
- Finally, serve the chicken and pasta covered in the artichoke sauce.
Beef fillet with spinach, grapes and almonds
Ingredients
- ¼ cup of ground almonds
- 2 bunches of spinach without stems
- 4 fillets of your favorite cut of beef or pork (about 150 g each)
- A cup of red seedless grapes, cut in half
- A spoonful of balsamic vinegar
- Salt and pepper as required
Preparation
- Preheat the oven to 180 ° C. When the desired temperature has been reached, place the almonds on a baking dish and toast them. Stir to keep them from sticking or burning. It will take about 5 minutes. After that, put them in a small container.
- Heat a large skillet over medium heat. Season the fillets with salt and pepper and place them in the pan. They should be left to cook for 3 to 5 minutes on each side. Then, place them on a plate or tray with aluminum foil, so they don’t cool down prematurely.
- Put the spinach and grapes in a pan. Let them cook for a while in their own water, until the spinach is lightly cooked. This will only take 1 or 2 minutes. Then, add the toasted almonds and spinach.
- Finally, serve the meat portions and cover them with the spinach sauce.
